This is the best Creme Brulee recipe you can find!
- Preheat the oven to 150 C degree. Put the cream in a saucepan. Split the vanilla pod in half and scrape the seeds into the cream. Add the pod to the cream and slowly bring to the boil.
- Meanwhile, whisk the egg yolks and sugar together, until pale. Pour the boiling cream onto the egg yolks, mixing well.. Pass the mixture through a fine sieve and allow to settle for a few minutes.
- Skim off any air bubbles. Place five ramekins in a roasting pan and pour the custard into the ramekins. Add enough boiling water to the roasting pan to reach 3/4 of the way up the ramekins to create a water bath. Place in the oven and cook until the mixture is set around the edges but still slightly wobbly in the centre, approximately 30-40 minutes.
- Remove from the oven and place on a tray to cool. When cool, chill to set.
- When ready to serve, sprinkle an even layer of caster sugar on top of the brulee and caramelise with a blowtorch. Alternatively, place in a water bath and caramelise under a very hot grill.. Serve with white chocolate sorbet and poached plums.
