This is the best Creme Brulee recipe you can find!

  1. Preheat the oven to 150 C degree. Put the cream in a saucepan. Split the vanilla pod in half and scrape the seeds into the cream. Add the pod to the cream and slowly bring to the boil.
  2. Meanwhile, whisk the egg yolks and sugar together, until pale. Pour the boiling cream onto the egg yolks, mixing well.. Pass the mixture through a fine sieve and allow to settle for a few minutes.
  3. Skim off any air bubbles. Place five ramekins in a roasting pan and pour the custard into the ramekins. Add enough boiling water to the roasting pan to reach 3/4 of the way up the ramekins to create a water bath. Place in the oven and cook until the mixture is set around the edges but still slightly wobbly in the centre, approximately 30-40 minutes.
  4. Remove from the oven and place on a tray to cool. When cool, chill to set.
  5. When ready to serve, sprinkle an even layer of caster sugar on top of the brulee and caramelise with a blowtorch. Alternatively, place in a water bath and caramelise under a very hot grill.. Serve with white chocolate sorbet and poached plums.
