Gooey in the middle, this delicious chocolate fondant is easy to make!
- Preheat the oven to 180 degrees. Grease 2 ramekins or individual moulds with butter. Slowly melt the butter and chocolate together over a low heat. Whisk the eggs and sugar together until pale then fold into the chocolate.
- Add the flour and fold in gently. Turn into moulds (half fill), put a teaspoon of raspberries in the middle, and then cover with the remaining mixture until 1 cm from the top. Bake for 12 minutes only.
- Very gently, turn out upside down onto warm plates.
- Garnish with a sprinkle of ground cinnamon, cocoa or icing sugar.
